As others have mentioned, you don't get paid extra when you are on salary. With the long hours and the breaks given, I would talk to your boss first to see if he/she will lighten up. If you really do not get a 30 minute lunch and 2 15 minute breaks, you should contact OSHA (Occupational Safety and Health Administration) www.osha.gov This is a government program that implies work labor laws. They will help you get the time off you are in titled to by law.

If you don't like your job, you can always get another one too.
References :
I never have, but if they are expecting you to work those kinds of hours regularly I would hope that they would have some sort of comp time or something.
References :
Nope.

You accepted the salary. Now you have to deal with it.

I think Denny's pays their cooks by the hour.
References :
If you're salaried, you aren't paid by the hour, so no overtime.
References :
Calgary, no. You will not be able to afford good housing unless your wife makes the same or better. Calgary is out of control. If you are a great chef and in fact it is a top restaurant, you should be demanding min $75-80.000, and $10.000 in moving expenses. They can't even keep Timmies cashiers at 16 bucks and hour...
