The early colonists used the Basic British monetary system – ie pound (£), shilling (S), pence (d) – but since actual coinage was scarce, they used whatever coins were available, based on the value of the metal.
The wage for a chef would depend on the chef’s skill and position – the same as today. A fry cook in a McDonald’s makes minimum wage – chef Emeril Lagasse makes millions a year. A chef for a Southern plantation was likely a slave and earned no wage. An innkeeper might pay a cook about the same wage as a common soldier, around 15£ a year.
