I worked about 80 hours a week, without any actual breaks..I am paid on a salary basis so does it considered me as an "exempt"? Can I still claim the 40 hours overtime? How?

It should all be set out in your Contract of Employment. You should have got one with in a couple of weeks of starting. It will set out the number of hours you work a week, start and finish time, notice period and whether you get paid overtime.
Anyway, unless you signed away your rights under the EU Working Week Directive, they are breaking the law if they make you work more than 48 hours a week.
You are also entitled to regular breaks including a lunch break of at least 30 minutes.

Being salaried has nothing to do with whether you get paid overtime or not.

The owner of this restaurant told everyone in the kitchen on salary that they had to take a mandatory 2 week vacation without pay. He said he needs to save money because of the economy. Can e do this?

Hello fellow Fort Worthian. The answer is yes unfortunately unless he is under some sort of employment contract. Texas is an at-will state.

There is a chance he can get unemployment….I don’t know the minimum amount of time off this takes.

Good luck trying to get an answer to this.
People never want to disclose what they make and usually lie when asked.
If you are in Germany, you might want to try to go visit a few chefs when they arent busy and tell them that you are interested in a career in this field.
Then ask them
not what THEY make but what would a person starting out in the field expect to make.
Be clear to specifiy that you are not asking about THEIR salary.

IF that is not an option talk to a technical college that offers that training and ask them about it.

what the heck is a master cook? A chef de partie is a line cook who works under a brigade of positions. Anyways, for a line cook postion you looking at probably $12.50/ hour max
